Seafood Paella Recipe
Ingredients:
2 Tbsp olive oil
1 onion, finely chopped
2 cloves galric, minced
1 green pepper, chopped
1 red pepper, chopped
7-8 oz (200 g) rice
9 oz (250 ml) white wine
18 oz (500 ml) water
1 pinch saffron
1 lb (450 g) little neck clams
1 lb (450 g) mussels
12 medium size shrimps
1/2 lb (200 g) firm white fish
fresh parsley, chopped
salt, pepper
Preparation:
- Heat olive oil in a paella pan
. Sautee onions, garlic, peppers and rice.
- Add wine, water and saffron. Cook covered for 8 minutes.
- Add the shellfish and cook for another 2 minutes.
- Add the fish. Cook for further few minutes or untill the broth has been absorbed and the rice is tender.
- Discard any unopened shells. Garnish with parsley and serve.
